Ingredients
- 4 Slices of Bread
- 2 Dairy Craft Cheese Slices
- 1 Potato Boiled and Mashed
- 1 Onion Chopped Fine
- 1/2 Capsicum Chopped Fine
- 1 Chilli Sliced Very Fine
- 1 Tbsp Chopped Coriander
- Salt and Pepper to Taste
- 1 teaspoon fresh ground black pepper
- ¼ cup all-purpose flour
- 1 ½ cups diced cooked chicken breast
- 1 ½ cups whole milk
- 1 tablespoon corn starch
- 1 refrigerated pie crust
- ¾ teaspoon kosher salt

Method
- In a large bowl mix together the potato, onion, capsicum, chillies, coriander, pepper and salt
- Spread the mixture evenly over 2 slices of bread.
- Add a slice of cheese each and top with the other slice of bread
- Toast in a toastie pan or on a flat griddle on a lot of heat till browned on each side
- Serve with ketchup
